Are you looking for a supply of authentic Jamaica Blue Mountain Green Bean coffee directly sourced from our co-operative of farmers? Our Green Bean selection is both developed and complex where the sweetness is pronounced with an underpinned tone caramel and chocolate flavours.

We are both the farmers and importers of Jamaica Blue Mountain Green Beans and have a unique process when picking and selecting:

  • Cherry picking: Our coffee his picked by hand during the harvest and we select the Cherry coffee at the peak of its ripeness – we take care when picking the Cherry bean to ensure the plant does not undergo damage. Post the harvest, we then ‘float’ and ‘swim’ the coffee to separate and remove the light and damaged Cherry coffee. This is achieved using a large tank of water – we discard of any coffee beans that float to the top of the tank as this tell us the coffee is defect.

 

  • Pulping & Washing: Our thorough and robust pulping method is used to remove the mucilage from all coffee beans. The coffee is then pulped and washed within 24 hours of harvest.
  • Drying: We sun-dry our coffee beans using the African Raised Bed method, which is best known for keeping the beans off the ground to allow for air circulation which in turns allows the coffee to dry evenly. We rotate our parchment intermittently and dry the parchment between 10-12.5% moisture. Our process is perfect for creating consistency in the coffee.

 

  • Storing: We store our parchment in a dry, ventilated area which is free from any forms of contamination and odorous areas. We then leave the Jamaica Blue Mountain coffee to ‘rest’ in storage for up to 6 weeks after drying. This is what we call the curing (or aging) process which allows for the coffee to settle down before we pack into bags ready to ship to you.

  • Hulling and Grading: Post the parchment being dried, we then move into the Hulling and Grading phase which prevents the grassy taste in the coffee when brewed. We ensure that the Graders used are cleaned regularly and we check for wear and tear frequently.

 

  • Sorting: The final step in the process is to sort the coffee where we remove any remaining discoloured beans. Our sorting machines are adjusted according to the size of the beans.
